Tuna and Quinoa Salad

1 cup (cooked) quinoa (equivalent to 60g uncooked)
2 small cans flavoured tuna
4 cups of salad
80g feta cheese
100g avocado
Method
- Cook quinoa according to packet directions. Alternatively, you could use a ‘quick cook’ microwave rice and quinoa mix.
- Serve rice, salad and tuna between 2 bowls. Top with avocado and crumbled feta.
