Ingredients

  • 1 cup (cooked) quinoa (equivalent to 60g uncooked)

  • 2 small cans flavoured tuna

  • 4 cups of salad

  • 80g feta cheese

  • 100g avocado

Method

  • Cook quinoa according to packet directions. Alternatively, you could use a ‘quick cook’ microwave rice and quinoa mix.
  • Serve rice, salad and tuna between 2 bowls. Top with avocado and crumbled feta.
