Ingredients

  • 1 cup (cooked) brown rice (equivalent to 70g uncooked)

  • 200g smoked salmon

  • 4 cups salad

  • 120g cottage cheese

Method

  • Cook the rice according to packet directions. Alternatively, you could use a ‘quick cook’ microwave brown rice.
  • Serve rice, salad and salmon between two bowls. Top with cottage cheese.
