Raspberry and Coconut Bliss Balls

These will take about 20 minutes to make and then need about 1 hour in the fridge to set.

Ingredients

  • 1 cup (125g) frozen raspberries

  • 1.5 cups (140g) rolled or quick cook oats

  • 2 tbsp honey

  • 30g melted butter

  • 1 tbsp chia seeds

  • 1 tbsp LSA

  • ½ cup (45g) desiccated coconut plus ¼ cup to coat the balls

Method

  • Place the raspberries, oats, honey, butter, chia seeds, LSA and 1/2 a cup of the coconut in a food processor and process until smooth. Depending on the size of your food processer, you may need to scrape down the side of the bowl several times to get the mixture to incorporate together.
  • Place the remaining coconut in a small bowl. With clean hands, shape the mixture into small balls (about 1 tablespoon per ball). Roll the ball in the coconut to lightly coat.
  • Place the balls in an airtight container and pop into the fridge for at least an hour so they have time to firm up a little.
  • You can keep then stored in the airtight container in the fridge for up to a week.

Notes

  • These balls are delicious as is, but are even more decadent with a drizzle of melted white chocolate over the top.
