Ingredients

  • For the chicken
  • 500g chicken thigh fillets

  • 1 brown onion

  • 1 red capsicum

  • 1 tbsp olive oil

  • 1 tbsp lime juice

  • 1 tsp cumin

  • 1 tsp paprika

  • For the salad
  • Shredded lettuce 

  • Diced tomato

  • Sliced cucumber

  • Grated cheese

  • 1 cup frozen corn kernels 

  • 1 tsp olive oil

  • For the guacamole
  • 1 avocado

  • 1/2 tomato, diced

  • 1/2 tsp minced garlic

  • Salt and pepper

  • Coriander (optional)

  • Tortillas

Method

  • Slice the onion and capsicum into strips and place in a bowl. Cut the chicken thighs into strips and add them to the bowl along with the olive oil, lime juice, paprika and cumin. Mix everything to combine and then leave to marinade for 5 minutes (you can also do this a few hours ahead of time and leave it in the fridge until you need it).
  • Heat a fry pan on medium/high heat and cook the chicken mixture until it is cooked through and starts to chargrill (you want the pan pretty hot to get the charred flavour so you need to make sure you move everything around frequently).
  • Meanwhile, heat another small pan over medium heat and add 1 tbsp olive oil and the corn kernels. Cook for about 5 minutes until the corn is golden. Transfer to a bowl.
  • To make the guacamole, add the avocado to a bowl and mash with the back of a fork. Add the tomato, garlic, salt, pepper and some chopped coriander (if using) and stir to combine. Add a dash of lime juice and taste to check the flavour is just right. 
  • Serve the salads on a plate in the middle of the table. Serve with the chicken, corn and guacamole. Warm the tortillas and let everyone make their own fajitas!
