Quick Fried Rice

1 tbsp extra virgin olive oil
1 packet of microwave brown rice
2 cups of frozen vegetable mix
2 cups shredded cooked chicken
2 eggs
1 tbsp salt-reduced soy sauce
Method
- Heat a fry pan over medium heat. Add the oil and once hot, add the frozen vegetables. Cook for 2-3 minutes then move to the side.
- Crack the eggs into the pan and whisk until the start to scramble. Move them around slowly and one cooked, mix through the vegetables.
- Add the packet of rice and the chicken and stir to heat through. Add the soy sauce and stir to combine.
- Divide among 4 bowls.
