Oat and Apple Pancakes

Ingredients

  • ½ cup quick cook oats

  • ¾ cup plain flour

  • 2 tsp baking powder

  • ½ tsp cinnamon

  • 1 cup buttermilk

  • 1 egg, lightly beaten

  • 2 tsp vanilla

  • 1 medium apple, grated

  • 1 tbsp maple syrup

Method

  • Place the oats, flour, baking powder and cinnamon in a bowl and whisk to combine.
  • Gradually whisk in the buttermilk, egg, vanilla and maple syrup until the batter is smooth. Fold in the grated apple.
  • Heat a fry pan over medium heat and spray with oil. Add ¼ cup of mixture for each pancake into the pan. Once the pancakes start to bubble, flip then over to cook until golden brown. Remove from the pan.
  • Serve these with fruit and yoghurt!
