Ingredients

  • 1 tbsp extra virgin olive oil

  • 1 packet of microwave brown rice

  • 2 cups of frozen vegetable mix

  • 2 cups shredded cooked chicken

  • 2 eggs

  • 1 tbsp salt-reduced soy sauce

Method

  • Heat a fry pan over medium heat. Add the oil and once hot, add the frozen vegetables. Cook for 2-3 minutes then move to the side.
  • Crack the eggs into the pan and whisk until the start to scramble. Move them around slowly and one cooked, mix through the vegetables.
  • Add the packet of rice and the chicken and stir to heat through. Add the soy sauce and stir to combine.
  • Divide among 4 bowls.
