Ingredients

  • FOR THE SLICE
  • 4 weetbix biscuits

  • 180g melted butter

  • ¼ cup brown sugar

  • 1 cup desiccated coconut

  • 1 cup self-raising flour

  • 2 tbs cocoa powder

  • FOR THE ICING
  • 1 cup icing sugar

  • 1 ½ tbs cocoa powder

  • 3 tbs milk

  • 50g butter (softened)

  • 2tbs desiccated coconut

Method

  • Preheat oven to 180˚C. Blend weetbix into small crumbs and add to a large mixing bowl.
  • Add all other dry ingredients and pour melted butter over the top. Mix to combine and pat down evenly into a lined tin with baking paper. Bake for 15 min and meanwhile make the icing.
  • Beat together butter with electric beaters until pale and soft.
  • Add all other ingredients to the bowel and mix until combined (add additional milk if you would prefer the icing to be thinner)
  • Spread icing onto slice while still warm and sprinkle extra desiccated coconut over the slice. Place in fridge to cool for at least 2 hours, but preferably overnight. Cut into 16 pieces.
