- FOR THE SLICE
4 weetbix biscuits
180g melted butter
¼ cup brown sugar
1 cup desiccated coconut
1 cup self-raising flour
2 tbs cocoa powder
- FOR THE ICING
1 cup icing sugar
1 ½ tbs cocoa powder
3 tbs milk
50g butter (softened)
2tbs desiccated coconut
Method
- Preheat oven to 180˚C. Blend weetbix into small crumbs and add to a large mixing bowl.
- Add all other dry ingredients and pour melted butter over the top. Mix to combine and pat down evenly into a lined tin with baking paper. Bake for 15 min and meanwhile make the icing.
- Beat together butter with electric beaters until pale and soft.
- Add all other ingredients to the bowel and mix until combined (add additional milk if you would prefer the icing to be thinner)
- Spread icing onto slice while still warm and sprinkle extra desiccated coconut over the slice. Place in fridge to cool for at least 2 hours, but preferably overnight. Cut into 16 pieces.
