Tandoori Lamb Wraps

500g lamb backstrap
1 tbsp tandoori paste
1 tbsp Greek yoghurt
1 Lebanese cucumber sliced
1 punnet of cherry tomatoes, halved
60g baby spinach
4 tortillas
Method
- Place the tandoori paste and yoghurt into a bowl and stir to combine. Add in the lamb and turn to coat. Cook the lamb on a high heat for about 8 minutes (turning half way through) until browned all over and cooked to your liking. Transfer to a plate and cover with foil to let it rest.
- Heat the tortilla in the microwave for 30 seconds.
- Slice the lamb into thin strips and divide it evenly onto the wraps topped with spinach, tomato and cucumber. Drizzle with some extra yoghurt on top.
