Tandoori Lamb Wraps

Ingredients

  • 500g lamb backstrap

  • 1 tbsp tandoori paste

  • 1 tbsp Greek yoghurt

  • 1 Lebanese cucumber sliced

  • 1 punnet of cherry tomatoes, halved

  • 60g baby spinach

  • 4 tortillas

Method

  • Place the tandoori paste and yoghurt into a bowl and stir to combine. Add in the lamb and turn to coat. Cook the lamb on a high heat for about 8 minutes (turning half way through) until browned all over and cooked to your liking. Transfer to a plate and cover with foil to let it rest.
  • Heat the tortilla in the microwave for 30 seconds.
  • Slice the lamb into thin strips and divide it evenly onto the wraps topped with spinach, tomato and cucumber. Drizzle with some extra yoghurt on top.
