Ingredients

  • For the meatballs
  • 500g lean beef mice

  • 1 cup breadcrumbs (I just blitz my bread crusts in the food processor and keep them in the freezer)

  • 1 clove garlic

  • 1 egg

  • 1 tbsp dried herbs (I usually use oregano and basil)

  • For the sauce
  • 1 tbsp olive oil

  • 1 tin diced tomatoes

  • 1 brown onion, chopped

  • 1 clove garlic

  • 1 heaped tbsp tomato paste

  • 1 tbsp dried herbs

  • 1/2 cup milk

  • Salt and pepper

Method

  • You can definitely use your hands but I add all of the meatball ingredients to the food processor and blitz until they are combined – SO EASY!
  • Roll into balls (whatever size you fancy) but make sure they are all similar size so they cook evenly
  • Heat a pan of medium heat and add the oil, add the onion and garlic and cook for about 5 minutes, stirring often. Add the tomatoes, tomato paste, herbs, salt and pepper and stir to combine. Fill up your tomato tin with water and add it to the pan as well.
  • Add the meatballs into the pan, bring to the boil then reduce the heat and simmer for about 20 minutes until the sauce thickens and the meatballs are cooked all the way through.
  • Take off the heat and add the milk. Serve with pasta and steamed vegetables.
