Scrambled Eggs with Tomato and Feta

Ingredients

  • 4 large eggs

  • 40mL milk

  • 1 tsp extra virgin olive oil

  • 40g feta cheese

  • ½ medium avocado

  • 8 cherry tomatoes

  • 2 slices wholegrain toast

  • 2 tsp butter

Method

  • Heat a pan over medium heat and add olive oil (if using). Whisk eggs and milk together in a small bowl and add to the pan. Stir gently until cooked through. Remove from the heat.
  • Meanwhile, cook toast and top with 1 tsp butter per slice.
  • Serve eggs on toast with a side of avocado and tomatoes. Sprinkle with feta cheese.
