Scrambled Eggs with Tomato and Feta

4 large eggs
40mL milk
1 tsp extra virgin olive oil
40g feta cheese
½ medium avocado
8 cherry tomatoes
2 slices wholegrain toast
2 tsp butter
Method
- Heat a pan over medium heat and add olive oil (if using). Whisk eggs and milk together in a small bowl and add to the pan. Stir gently until cooked through. Remove from the heat.
- Meanwhile, cook toast and top with 1 tsp butter per slice.
- Serve eggs on toast with a side of avocado and tomatoes. Sprinkle with feta cheese.
