Quick Salmon and Mango Tacos

2 x medium salmon fillets, skin on or off as preferred
6 x small tortilla
- Salsa
1 large mango, diced
1 large tomato, diced
1 large avocado, diced
1/2 cup coriander, roughly chopped
Juice of 1/2 lime
Pinch of black pepper
Pinch of chilli flakes
Method
- Preheat your oven to 220C.
- Line a tray with foil and add a drizzle of oil, put salmon (skin down if using) on the tray and season with salt and pepper.
- Add salmon to the oven, bake for 15-20 minutes until cooked through or still slightly pink in the middle.
- Add all salsa ingredients to a bowl and combine.
- Add salmon and salsa to tortillas.
- Use a drizzle of your preferred sauce – we like a Nando’s perinaise, or chipotle garlic aioli.
