Choc Coconut Macaroons

Ingredients

  • 200g finely shredded coconut (whiz in a blender if yours is not fine)

  • 1/4 cup cocoa

  • 1/2 cup maple syrup or honey

  • 2 Tb melted coconut oil

  • 2 tsp vanilla

  • 1/4 tsp salt

  • Topping
  • 40g dark chocolate

  • 20g nuts (e.g. pistachios or walnuts), chopped

Method

  • Preheat the oven to 160C and line a large baking tray with baking paper.
  • Add all the macaroon ingredients to a bowl and combine well.
  • Press the mixture into a curved tablespoon to mould and place on the tray. Alternatively, roll into balls and flatten slightly.
  • Bake until crisp on the outside, approximately 20 minutes.
  • Allow the macaroons to cool.
  • Melt chocolate slowly in the microwave, checking frequently to ensure it is not overheated. Alternatively, melt chocolate on the stove top via placing the chocolate in a heat proof bowl over a pot of boiling water, stirring frequently.
  • Sprinkle chopped nuts on top.
  • Transfer to an airtight container.

Notes

  • Try it another way? Use your finger to press a small depression into the macaroons, and fill with a teaspoon of your favourite jam before baking.
