Oat and Apple Pancakes

½ cup quick cook oats
¾ cup plain flour
2 tsp baking powder
½ tsp cinnamon
1 cup buttermilk
1 egg, lightly beaten
2 tsp vanilla
1 medium apple, grated
1 tbsp maple syrup
Method
- Place the oats, flour, baking powder and cinnamon in a bowl and whisk to combine.
- Gradually whisk in the buttermilk, egg, vanilla and maple syrup until the batter is smooth. Fold in the grated apple.
- Heat a fry pan over medium heat and spray with oil. Add ¼ cup of mixture for each pancake into the pan. Once the pancakes start to bubble, flip then over to cook until golden brown. Remove from the pan.
- Serve these with fruit and yoghurt!
