Massaman Chicken Curry

Ingredients

  • 500g chicken thighs, diced

  • 2 tbsp Massaman Curry Paste

  • 1 tbsp olive oil

  • 400g tin light Coconut Cream

  • 1 large brown onion

  • 2 cups potato, cubed

  • 4 cups vegetables (eg. carrots, broccoli, capsicum)

  • 2 tbsp fish sauce

  • 1 tbsp soy sauce

  • 1 tbsp brown sugar

  • Rice to serve

Method

  • Bring a saucepan full of water to the boil. Add the diced potatoes and cook for 3-4 to minutes. Drain and set aside.
  • Heat a fry pan over medium heat. Add the oil and curry paste and cook for a few minutes, until fragrant.
  • Add 1/2 the tin of coconut cream and cook, stirring for about 5 minutes until the sauce has thickened.
  • Add the diced chicken to the sauce and cook for 5 minutes until the chicken starts to change colour.
  • Add the rest of the coconut cream, fish sauce, soy sauce an sugar and stir to combine. Add the onion, potato and the rest of the vegetables and stir to combine. Cover and simmer on a low heat for 20-30 minutes until the chicken is cooked through and the vegetables are tender.
  • Serve over rice.
