Choc Nut Slice

This slice needs to chill in the fridge for about 1 hours before serving.

Ingredients

  • 1 C dates

  • 1/2 C nut butter (e.g. peanut / almond)

  • 1/2 C chopped nuts (e.g. peanuts, cashews)

  • 1 C puffed rice

  • 3 Tb coconut oil or butter

  • 100g dark choc

Method

  • Heat oil/butter in a small saucepan (you will need to mix all the ingredients into this so make sure it’s big enough).
  • Roughly chop the dates and add them to the saucepan. Cook on a low heat until the dates are soft enough to stir/mash into a paste – about 10 minutes.
  • Stir through the nut butter.
  • Remove from heat and stir through chopped nuts and puffed rice.
  • Press into a lined baking tray using the back of a spoon.
  • Melt choc in the microwave in 30 second intervals and spread on top of the slice.
  • Chill for ~1h and chop into 16 pieces!
