Maple Chicken Tray Bake

1kg chicken breast
2 tbs olive oil
Salt & pepper
½ tsp ground cinnamon
3 garlic cloves
¼ cup white wine
½ cup maple syrup
¼ cup dijon mustard
Seeds from 1 pomegranate
1 orange (sliced)
4 sprigs fresh rosemary
Method
- Preheat oven to 190˚C. Heat a large saucepan over high heat and add olive oil.
- Season chicken with salt, pepper and cinnamon. Fry chicken until the golden brown. Remove chicken and set aside on a plate.
- Add white wine to the pan to deglaze. Then add maple syrup and Dijon mustard and stir to combine.
- Transfer chicken to an oven proof dish and pour sauce over the top. Add garlic cloves, orange slices, pomegranate seeds and rosemary sprigs to the oven dish and bake in oven for 30 min.
