Lemongrass Chicken Rice Paper Rolls

Ingredients

  • Lemongrass Chicken
  • 2tps garlic paste or 2 cloves garlic

  • 1tbs lemongrass paste or 1 stalk fresh lemongrass

  • 2tbs lime juice

  • 1tbs soy sauce

  • 2tbs fish sauce

  • 2tbs brown sugar

  • 1tbs vegetable oil

  • Rice Paper Rolls
  • Rice paper rolls

  • Lemongrass chicken

  • Mango

  • Cucumber

  • Carrot

  • Vermicelli noodles

  • Mango

  • Mint leave

  • Dipping sauce
  • 2tbs fish sauce

  • 3tbs lime juice

  • 2tbs brown sugar

  • 1tbs garlic paste

  • 1/2tbs chilli paste

Method

  • Lemongrass Chicken
  • Cut chicken into strips and set aside.
  • Combine all sauce ingredients and add chicken. Leave to marinate for at least 1 hour.
  • Fry the chicken in a dash of olive oil until cooked through.
  • Dipping Sauce
  • Add all ingredients into a bowl and stir to combine
  • Rice Paper Rolls
  • Chop mango, carrot and cucumber into strips. Wash mint leaves and pat dry. Cover vermicelli noodles with boiling water and leave for 5 minutes. Then drain.
  • Soak each rice paper roll in hot water for approx. 3 seconds (don’t leave them in too long, they will soften as you are wrapping them!) Add each of the ingredients and roll up
  • Dip into sauce and enjoy!
