Beef Stir Fry

500g lean beef strips
1 brown onion, diced
1 clove garlic (1 tsp minced)
8 cups mixed vegetables
2 cups (cooked) brown rice (equivalent to 140g uncooked)
1 tbsp extra virgin olive oil
2 tbsp soy sauce
2 tbsp hoisin sauce
Method
- Heat a fry pan over medium heat. Cook the beef strips in half the olive oil for 2-3 minutes until brown and cooked through. Set aside.
- Next, cook the onion and garlic in the remaining oil until fragrant. Add the rest of the vegetables and cook for 5 minutes or until tender.
- Add the beef back into the pan to heat through. Add soy and hoisin sauce and stir to combine.
- Serve between 4 bowls over rice.
