Ingredients

  • 4 large eggs

  • 1 tsp olive oil (optional)

  • 2 slices wholegrain toast

  • 2 tsp butter or margarine

  • ½ medium avocado

  • 8 cherry tomatoes

  • 1 cup baby spinach

Method

  • Heat a pan over medium heat and add olive oil (if using). Cook eggs any way you like (scrambled, fried or poached).
  • Cook toast and top with 1 tsp butter per slice.
  • Serve eggs on toast with a side of baby spinach, cherry tomatoes and avocado.
