150g broccoli, finely chopped
½ brown onion, finely chopped
100g grated cheese (light)
420g corn kernels, drained
1 cup self-raising flour
8 whole eggs
½ cup milk
Fresh parsley
Salt and pepper to taste
Method
- Preheat oven to 180°C (160°C fan-forced).
- In a large bowl, combine broccoli, onion, cheese, corn and sifted flour.
- In a separate bowl, combine eggs and milk, beat lightly
- Pour egg mixture over other ingredients and mix well. Season with salt and pepper.
- Pour into a lined baking tray.
- Bake for about 30 minutes, or until well browned.
- Cut into squares and garnish with parsley, if desired.
- Serve with a side of vegetables or salad
