- Lemongrass Chicken
2tps garlic paste or 2 cloves garlic
1tbs lemongrass paste or 1 stalk fresh lemongrass
2tbs lime juice
1tbs soy sauce
2tbs fish sauce
2tbs brown sugar
1tbs vegetable oil
- Rice Paper Rolls

Cucumber
Carrot
Vermicelli noodles
Mango
Mint leave
- Dipping sauce
2tbs fish sauce
3tbs lime juice
2tbs brown sugar
1tbs garlic paste
1/2tbs chilli paste
Method
- Lemongrass Chicken
- Cut chicken into strips and set aside.
- Combine all sauce ingredients and add chicken. Leave to marinate for at least 1 hour.
- Fry the chicken in a dash of olive oil until cooked through.
- Dipping Sauce
- Add all ingredients into a bowl and stir to combine
- Rice Paper Rolls
- Chop mango, carrot and cucumber into strips. Wash mint leaves and pat dry. Cover vermicelli noodles with boiling water and leave for 5 minutes. Then drain.
- Soak each rice paper roll in hot water for approx. 3 seconds (don’t leave them in too long, they will soften as you are wrapping them!) Add each of the ingredients and roll up
- Dip into sauce and enjoy!
