Tahini Sauce

Ingredients
½ cup tahini
Juice of 1 whole lemon
4 large or 6 small garlic cloves, finely chopped or minced
½ tsp cumin or paprika (or try another spice!)
6-8 Tb water, add more for a thinner sauce
½ tsp salt
Method
- In a bowl, combine the lemon juice and garlic – leave to rest for 15-30min (or longer if you have time)
- Pour the mixture into a food processor or blender, sieving out the garlic with a fine strainer (save it for another meal)
- Add in the remaining ingredients and blend until smooth (you could also whisk the sauce in a bowl if you don’t have a blender)
- Add more water if you desire a thinner more pourable sauce
- Serve!
