Spinach, Pumpkin and Feta Salad

½ butternut pumpkin (peeled and cubed)
1 large bag of baby spinach
1 block salt reduced feta cheese
3 tbs honey
2 tbs Olive oil
Salt
Pepper
Method
- Preheat your oven to 180˚C.
- Start by peeling and dicing your pumpkin into bite sized pieces. Place into a large oven dish and drizzle honey and olive oil. Add some salt and pepper and mix with hands until all the pumpkin pieces are coated evenly.
- Place dish into oven and bake for 25-30minutes.
- Meanwhile, cut the block of feta into small cubes. Add spinach and feta to a large salad bowl. When the pumpkin is finished cooking take out of the oven and add into the salad bowl. Toss to combine evenly and serve!
Notes
- To spice the recipe up a little bit, you can add some nuts onto the top of the salad for some extra crunch! I like to use pine nuts or walnuts, but go with your favourite!
