Chicken and Sundried Tomato Salad

Ingredients

  • 1 serve microwave brown rice

  • 1 cup baby spinach

  • 1/4 cup sundried tomatoes in oil

  • 125g cooked chicken

  • Drizzle of kewpie mayo

Method

  • Heat rice according to packet direction and slice chicken into bite size pieces. Heat the chicken in the microwave if you prefer it warm (and it was cooked prior).
  • Place the rice in bowl and top with the spinach, chicken and sundried tomatoes. Drizzle a tablespoon of the sundried tomato oil over the salad for some extra flavour.
  • Drizzle the kewpie mayo over the top, mix it all together and enjoy!

Notes

  • You could use any leftover chicken for this recipe or use a store bought chicken as well.
