Ingredients

  • 4 salmon steaks

  • ~120g soba noodles, cooked as per packet instructions

  • 1 lebanese cucumber, sliced and quartered

  • 1-2 C shelled edamame, prepared as per packet instructions

  • 1 capsicum, sliced

  • 2 carrots, grated

  • 4 C baby spinach

  • 1 avocado, quartered

  • 1 lemon, quartered

  • Teriyaki sauce, to serve

Method

  • Preheat oven to 180C. Place salmon on a lined oven-proof tray, and bake for ~15 minutes or until cooked through (or as per preference).
  • Prepare noodles as per packet instructions.
  • Assemble noodles, vegetables, and salmon in 4 serving bowls.
  • Pour teriyaki sauce over each meal.
