4 salmon steaks
~120g soba noodles, cooked as per packet instructions
1 lebanese cucumber, sliced and quartered
1-2 C shelled edamame, prepared as per packet instructions
1 capsicum, sliced
2 carrots, grated
4 C baby spinach
1 avocado, quartered
1 lemon, quartered
Teriyaki sauce, to serve
Method
- Preheat oven to 180C. Place salmon on a lined oven-proof tray, and bake for ~15 minutes or until cooked through (or as per preference).
- Prepare noodles as per packet instructions.
- Assemble noodles, vegetables, and salmon in 4 serving bowls.
- Pour teriyaki sauce over each meal.
