Slow Cooker Pulled Pork

1 boneless or bone in pork shoulder, netting removed
2 tsp salt
1 tsp black pepper
2 tbsp extra virgin olive oil
1 medium onion, peeled and chopped
4 cloves of garlic, peeling and chopped
2 tbsp tomato paste
2 tsp ground cumin
1 cup water
3 tbsp apple cider vinegar
1 tbsp Worcestershire sauce
Method
- Rub the pork with the salt and pepper and then set aside while you prepare the rest of the ingredients.
- Heat the oil in a pan over medium heat. Add the onion and garlic and cook until fragrant. Stir in the tomato paste and cumin; cook stirring for about 3 minutes. Add the water, apple cider vinegar and Worcestershire sauce and cook for about 1 minute, scraping the bottom of the pan.
- Place the pork into the slow cooker and pour over the sauce. Move the pork around the sauce spread evenly over around the pork.
- Cook the pork on low for 6-8 hours or on high for 3-4 hours or until you are easily able to shred it.
- Transfer the pork to a chopping board to shred (remove the bone if needed).
- Discard any fat from the surface of the liquid and then add the shredded pork back into the slow cooker and stir into the sauce.
- This is delicious served roast dinner style or on fresh bread rolls with coleslaw.
