Slow Cooker Beef Stroganoff

Ingredients

  • 500g chuck steak, diced

  • 1 cup sliced mushrooms

  • 2 heaped tbsp tomato paste

  • 3/4 cup beef stock

  • 1/2 cup sour cream

  • 1 cup uncooked rice

  • Mixed steam vegetables to serve

Method

  • Add beef stock and tomato paste into the slow cooker and stir to combine. Season with salt and pepper.
  • Add in the diced beef and stir through the stir. Cook on low for 8 hours or high for 4 hours.
  • hour before the beef is ready, add the mushrooms to the slow cooker and stir through.
  • Meanwhile, cook the rice according to the packet directions and prep and cook your vegetables.
  • When the meat is ready, add in the sour cream and stir to combine.
  • Serve the rice with the vegetables and top with the beef.
