Simple Shepherd’s Pie

Ingredients

  • 1 brown onion, finely diced

  • 1 clove of garlic, crushed

  • 500g lean beef mince

  • 2 tbsp tomato paste

  • 1 tbsp Worchester sauce

  • 1 tin tomatoes

  • 600g sweet potato, cut into cubes

  • 4 cups mixed salad, to serve

Method

  • Preheat the oven to 180°C.
  • Heat a pan over medium heat and cook the onion and garlic until fragrant. Add the mince and cook until browned. Allow time for all of the moister to evaporate and the mince to start to fry.
  • Add the Worchester sauce, tomato paste and tin of tomatoes and stir to combine. Add extra water if needed. Bring to the boil, then simmer for 10 minutes until the sauce has thickened.
  • Meanwhile, boil the sweet potato until they are soft and tender. Drain the water and mash until smooth.
  • Layer the mince in the bottom of an over proof dish. Top with mash sweet potato and grated cheese. Cook in the oven for 20 minutes until the cheese is golden brown.
  • Serve the pie with a mixed salad.
