Spaghetti Bolognese

Ingredients

  • 1 brown onion, diced

  • 1 clove garlic, crushed

  • 2 carrots, diced

  • 2 sticks of celery, diced

  • 500g lean beef mince

  • 2 tbsp tomato paste

  • 2 tins tomatoes

  • 1 tbsp dried oregano

  • 1 tbsp extra virgin olive oil

  • 2 cup cooked pasta (equivalent to 160g uncooked)

Method

  • Finely dice the onion, carrot and celery or chop in a food processor.
  • Heat a pan over medium heat and cook mince in the oil until brown and cooked through. Allow time for all of the moister to evaporate and the mince to start to fry.
  • Add the vegetables and garlic to the pan and cook for 2 minutes. Mix through the tomato paste.
  • Add the tins of tomatoes, fill the cans back up with water and add it to the pan. Add oregano and season with salt and pepper.
  • Bring to the boil then simmer Bolognese for at least 30 minutes (but can cook up to the 3 hours, adding more water if needed – the longer you simmer, the better the flavour)
  • Meanwhile, cook pasta according to packet direction.
  • Serve pasta and sauce between 2 bowls and top with parmesan cheese.
