Pork and Plum Stir Fry

Ingredients

  • 1 brown onion, sliced

  • 1 glove of garlic, crushed

  • 8 cups mixed vegetables

  • 500g pork fillet, sliced into strips

  • 2 cups (cooked) of egg or rice noodles

  • 4 tbsp plum sauce or marinade

  • 1 tbsp extra virgin olive oil

Method

  • Cook the noodles according to packet directions.
  • Heat a fry pan over medium heat. Cook the pork in half the oil until it is cooked through. Set aside.
  • Cook the onion and garlic in the remaining oil until fragrant. Add the other vegetables and cook for 5 minutes or until tender.
  • Add the pork back into the pan and heat through. Stir through the plum sauce.
  • Serve the stir fry with noodles.
