Pork and Plum Stir Fry

1 brown onion, sliced
1 glove of garlic, crushed
8 cups mixed vegetables
500g pork fillet, sliced into strips
2 cups (cooked) of egg or rice noodles
4 tbsp plum sauce or marinade
1 tbsp extra virgin olive oil
Method
- Cook the noodles according to packet directions.
- Heat a fry pan over medium heat. Cook the pork in half the oil until it is cooked through. Set aside.
- Cook the onion and garlic in the remaining oil until fragrant. Add the other vegetables and cook for 5 minutes or until tender.
- Add the pork back into the pan and heat through. Stir through the plum sauce.
- Serve the stir fry with noodles.
