Ingredients

  • Salad & Tuna
  • 400-500g fresh raw tuna, diced (1-2cm pieces)

  • ~2-4 C soba noodles

  • 1/2 whole pineapple, diced (OR tinned pineapple)

  • 1-2 C edamame

  • 4-6 radishes, sliced

  • 1 cucumber, diced

  • 1 large carrot, grated

  • 1 avocado, sliced

  • Soy sauce, to dress

  • Marinade for tuna
  • 6 spring onions, sliced

  • 1/4 cup coriander

  • 2 tsp grated ginger

  • 3 garlic cloves

  • 1 Tb sesame seeds

  • 4 Tb soy sauce

  • 2 Tb sesame oil

  • 1 Tb honey

  • Chill flakes if desired

Method

  • Cook noodles and edamame according to packet instructions.
  • Divide noodles among 4 bowls. Arrange pineapple, edamame, radish, cucumber, carrot and avocado on each.
  • Combine all marinade ingredients and mix through diced tuna.
  • Divide tuna among 4 bowls.
  • Drizzle soy sauce and add extra coriander on top if desired.
