Almond, Apricot and Coconut Muesli

Ingredients

  • 4 cup rolled oats

  • 1.5 cup nuts/seeds (I use ~1 cup roughly chopped almonds, and 1/4 cup each sunflower and pepitas, but feel free to mix it up)

  • 1 cup coconut flakes

  • 1 cup roughly sliced apricots

  • 1/3 cup coconut oil

  • 1/3 cup maple syrup

  • 1 tsp cinnamon

Method

  • Add all the dry ingredients to a large bowl, except the apricot. Warm the hard coconut oil and maple syrup on a low heat for a few minutes then mix into the dry ingredients.
  • Add to a lined tray, and bake at 180C for ~25 mins, giving the muesli a stir at the 10 and 20 minute mark.
  • Allow to cool then add in the apricots before storing. This mix will last several months in an airtight container.
