Lamb and Halloumi Salad

Ingredients

  • 1 cup baby spinach

  • 1/2 tomato

  • 1/2 cucumber

  • 1/4 avocado

  • 1/3 cup chickpeas

  • 2 lamb koftas (pre-cooked)

  • 45g halloumi

  • Drizzle olive oil

  • Squeeze of lemon juice

  • Drizzle of kewpie mayo

Method

  • Heat a small fry pan over a medium heat and spray with oil. Cut the halloumi into strips and fry until each side is golden brown. Cut into small pieces.
  • Warm the koftas and cut into bite size pieces. Drain and rinse the chickpeas.
  • Add the spinach, tomato, cucumber, avocado and chickpeas to a bowl. Drizzle with olive oil and a squeeze of lemon juice.
  • Top with the halloumi and land pieces then drizzle with kewpie. Mix and enjoy!

Notes

  • This recipe used store-bought lamb koftas that were cooked for dinner the night before. You could sub these with any leftover meat that you have or cook them fresh for this meal.
