Lamb and Halloumi Salad

Ingredients
1 cup baby spinach
1/2 tomato
1/2 cucumber
1/4 avocado
1/3 cup chickpeas
2 lamb koftas (pre-cooked)
45g halloumi
Drizzle olive oil
Squeeze of lemon juice
Drizzle of kewpie mayo
Method
- Heat a small fry pan over a medium heat and spray with oil. Cut the halloumi into strips and fry until each side is golden brown. Cut into small pieces.
- Warm the koftas and cut into bite size pieces. Drain and rinse the chickpeas.
- Add the spinach, tomato, cucumber, avocado and chickpeas to a bowl. Drizzle with olive oil and a squeeze of lemon juice.
- Top with the halloumi and land pieces then drizzle with kewpie. Mix and enjoy!
Notes
- This recipe used store-bought lamb koftas that were cooked for dinner the night before. You could sub these with any leftover meat that you have or cook them fresh for this meal.
