500g small white potatoes
Extra Virgin Olive Oil
Salt and Pepper
Method
- Preheat the oven to 220 degrees Celsius
- Cut the potatoes into wedges (depending on the size, cut it into 4 or 8 pieces)
- Bring a large saucepan of water to the boil then put the potatoes in and cook for 4 minutes and drain
- Place potatoes onto a baking tray (line with paper if needed). Drizzle over some olive oil and add salt and pepper, Toss the potatoes to make sure they are evenly covered and spread onto the tray
- Cook in the oven for 40 minutes, taking them out half way through and shuffling them around a little
