Ingredients

  • Salad
  • Large handful of baby spinach

  • ¼ large cucumber, sliced

  • ~6-8 cherry tomatoes, halved

  • Handful (~10) sugar snap peas, sliced in half

  • ¼ capsicum, sliced into strips

  • 1 raw cob of corn, kernels taken off with a knife (or 1/3 C canned corn)

  • ¼ cup cooked brown rice (more for those with higher energy needs)

  • Dressing
  • 1-2 Tb dressing of choice

  • ¼ lemon

  • Protein**
  • ~80g cooked chicken breast (a BBQ chook or pre-cooked chicken works well here for a convenience meal!)

  • ¼ cup cottage cheese

Method

  • Prepare and add all salad ingredients into a large bowl.
  • Add salad dressing and a squeeze of lemon, and toss. I love the ‘Birch and Waite Yoghurt Ranch’ from Woolies with this salad!
  • Add salad into your serving bowl, and place chicken and cottage cheese on top.
  • Enjoy!
