Everyday Salad

Ingredients
- Salad
Large handful of baby spinach
¼ large cucumber, sliced
~6-8 cherry tomatoes, halved
Handful (~10) sugar snap peas, sliced in half
¼ capsicum, sliced into strips
1 raw cob of corn, kernels taken off with a knife (or 1/3 C canned corn)
¼ cup cooked brown rice (more for those with higher energy needs)
- Dressing
1-2 Tb dressing of choice
¼ lemon
- Protein**
~80g cooked chicken breast (a BBQ chook or pre-cooked chicken works well here for a convenience meal!)
¼ cup cottage cheese
Method
- Prepare and add all salad ingredients into a large bowl.
- Add salad dressing and a squeeze of lemon, and toss. I love the ‘Birch and Waite Yoghurt Ranch’ from Woolies with this salad!
- Add salad into your serving bowl, and place chicken and cottage cheese on top.
- Enjoy!
