4 large eggs
1 tsp olive oil (optional)
2 slices wholegrain toast
2 tsp butter or margarine
½ medium avocado
8 cherry tomatoes
1 cup baby spinach
Method
- Heat a pan over medium heat and add olive oil (if using). Cook eggs any way you like (scrambled, fried or poached).
- Cook toast and top with 1 tsp butter per slice.
- Serve eggs on toast with a side of baby spinach, cherry tomatoes and avocado.
