10 eggs
½ cup of spinach (fresh or frozen)
12 cherry tomatoes
½ cup of grated tasty cheese
Method
- Whisk 10 eggs in a large bowl and add in the spinach
- Lightly spray a 12 cup muffin tin with non-stick oil spray and fill each cup to halfway with the egg mix
- Cut the cherry tomatoes in half and place 2 halves in each cup
- Add cheese on top of each cup
- Put in the oven set to 180° and bake for 20 minutes
- Let them cool for 10 minutes before serving
