Ingredients

  • 10 eggs

  • ½ cup of spinach (fresh or frozen)

  • 12 cherry tomatoes

  • ½ cup of grated tasty cheese

Method

  • Whisk 10 eggs in a large bowl and add in the spinach
  • Lightly spray a 12 cup muffin tin with non-stick oil spray and fill each cup to halfway with the egg mix
  • Cut the cherry tomatoes in half and place 2 halves in each cup
  • Add cheese on top of each cup
  • Put in the oven set to 180° and bake for 20 minutes
  • Let them cool for 10 minutes before serving
