200g pulse pasta (uncooked)
1 tbsp olive oil
½ cup mushrooms, quartered
1 small zucchini, diced
1 small red capsicum, diced
1 clove garlic
1 small brown onion, diced
500g chicken breast, diced
Parmesan cheese to serve
Method
- Cook the pasta according to packet directions.
- Meanwhile, heat a fry pan over medium heat and add the oil to the pan. Add the onion and garlic and fry for a few minutes until the onion starts to soften.
- Add the chicken and cook for 6 minutes until the chicken is golden and cooked through – make sure all the juice has evaporated and the chicken has started to fry!
- Add the vegetables and cook for a few minutes until the vegetables are soft enough for your bub to eat.
- Serve the pasta with the chicken and vegetables and top with Parmesan cheese.
