Ingredients

  • Dry
  • 2 cups oat flour (make your own by blending rolled oats in a high powered blender)

  • 1.5 cups almond meal

  • 1 tsp baking powder

  • 100g chocolate (e.g. a chopped bar, chocolate chips)

  • 1/3 cup cocoa powder

  • 1/2 tsp salt

  • Wet
  • 3 eggs

  • 2 large ripe mashed bananas

  • 1/3 cup plain yogurt

  • 1/3 cup maple syrup

  • 4 Tb olive oil

  • 1 tsp vanilla extract

Method

  • Preheat the oven to 180C and line or grease a standard 12 cup muffin tin.
  • Combine all the dry ingredients in a large bowl.
  • Combine all the wet ingredients in a smaller bowl.
  • Add the wet ingredients to the dry ingredients and mix until just combined.
  • Spoon the batter into the prepared tin, filling each to the brim.
  • Bake for 25-30 minutes or until a skewer inserted in the center comes out almost clean.

Notes

  • These are a nutritious carb-rich pre-workout snack, or a quality breakfast on the go for chocolate lovers. 
  • Best if eaten within a few days, or freeze them and heat up when needed.
