- Dry
2 cups oat flour (make your own by blending rolled oats in a high powered blender)
1.5 cups almond meal
1 tsp baking powder
100g chocolate (e.g. a chopped bar, chocolate chips)
1/3 cup cocoa powder
1/2 tsp salt
- Wet
3 eggs
2 large ripe mashed bananas
1/3 cup plain yogurt
1/3 cup maple syrup
4 Tb olive oil
1 tsp vanilla extract
Method
- Preheat the oven to 180C and line or grease a standard 12 cup muffin tin.
- Combine all the dry ingredients in a large bowl.
- Combine all the wet ingredients in a smaller bowl.
- Add the wet ingredients to the dry ingredients and mix until just combined.
- Spoon the batter into the prepared tin, filling each to the brim.
- Bake for 25-30 minutes or until a skewer inserted in the center comes out almost clean.
Notes
- These are a nutritious carb-rich pre-workout snack, or a quality breakfast on the go for chocolate lovers.
- Best if eaten within a few days, or freeze them and heat up when needed.
