Ingredients

  • 1 brown onion, diced

  • 1 clove of garlic, crushed

  • 2 carrot, diced

  • 400g lean beef mince

  • 1 tin of tomatoes

  • 2 tbsp taco seasoning

  • 1 cup red kidney beans, drained and rinsed

  • 2 cup (cooked) Basmati rice (equivalent to 140g uncooked)

  • 2 zucchini, sliced

  • 20 green beans

  • 4 tbsp Greek yoghurt

  • 1 tbsp extra virgin olive oil

Method

  • Heat a pan over medium heat. Cook onion and garlic in olive oil until fragrant.
  • Add mince and seasoning and cook until browned. Add tomatoes and kidney beans; bring to the boil then simmer for 20 minutes until mixture has thickened.
  • Meanwhile, cook rice according to packet directions and steam the zucchini and beans in the microwave for 2 minutes or until tender.
  • Serve rice and chili between 4 bowls. Top with yoghurt and vegetables.
