Chilli Con Carne

1 brown onion, diced
1 clove of garlic, crushed
2 carrot, diced
400g lean beef mince
1 tin of tomatoes
2 tbsp taco seasoning
1 cup red kidney beans, drained and rinsed
2 cup (cooked) Basmati rice (equivalent to 140g uncooked)
2 zucchini, sliced
20 green beans
4 tbsp Greek yoghurt
1 tbsp extra virgin olive oil
Method
- Heat a pan over medium heat. Cook onion and garlic in olive oil until fragrant.
- Add mince and seasoning and cook until browned. Add tomatoes and kidney beans; bring to the boil then simmer for 20 minutes until mixture has thickened.
- Meanwhile, cook rice according to packet directions and steam the zucchini and beans in the microwave for 2 minutes or until tender.
- Serve rice and chili between 4 bowls. Top with yoghurt and vegetables.
