Slow Cooker Beef Stroganoff

500g chuck steak, diced
1 cup sliced mushrooms
2 heaped tbsp tomato paste
3/4 cup beef stock
1/2 cup sour cream
1 cup uncooked rice
Mixed steam vegetables to serve
Method
- Add beef stock and tomato paste into the slow cooker and stir to combine. Season with salt and pepper.
- Add in the diced beef and stir through the stir. Cook on low for 8 hours or high for 4 hours.
- hour before the beef is ready, add the mushrooms to the slow cooker and stir through.
- Meanwhile, cook the rice according to the packet directions and prep and cook your vegetables.
- When the meat is ready, add in the sour cream and stir to combine.
- Serve the rice with the vegetables and top with the beef.
